chocolate caramel crinkle cookies

Ingredients List

12 tbsp salted butter, softened
1 cup  sugar
1/2 cup packed light-brown sugar
2 large eggs
1 1/2 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 cup cocoa powder
1 1/2 tsp baking powder
1/4 tsp salt
2 dozen caramel candies
Pinch coarse sea salt
1 cup powdered sugar

Directions

1 Combine butter and both sugars in a large mixing bowl and beat until fluffy. Add eggs, one at a time, and add in vanilla extract.

2 In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Then, gradually add dry ingredients to wet until completely combined. Cover bowl with plastic wrap and refrigerate at least 3 hours or overnight.

3 After chilling, preheat oven to 350 degrees. Roll dough into walnut-sized balls. Then, press a small piece of caramel and a speck of coarse sea salt into the center and reroll. Drop each ball into a bowl of powdered sugar to coat each cookie. Spread 2 inches apart on baking sheet and bake on 350F for 12 minutes. Coat the cookie again with powdered sugar after baking if necessary.
