2 teaspoons olive oil
1 onion
2 red (or green) bell peppers, seeded and diced
3 carrots
1 Tablespoon + 1 teaspoon chili powder
3 garlic cloves, minced
1/2 teaspoon ground cumin
1/4 teaspoon cinnamon
1 pinch of nutmeg or ground cloves
1 can of whole plum tomatoes or fire roasted tomatoes (28 ounce)
1 can black beans (15 oz) drained & rinsed
1 can kidney beans (15 oz)
3 Tablespoons tomato paste
1/2 teaspoon fresh ground pepper
1/2 teaspoon salt

1 In a large saucepan, heat the oil. Add the onions and pepper and cook stirring as needed until softened (about 5 minutes). 2 Add the carrots, chili powder, garlic, cumin, cinnamon, and nutmeg/cloves. Cook stirring about 1 minute. 3 Stir in the tomatoes, black beans, tomato paste, pepper, and salt. Cook covered, stirring as needed until thickened for about 1 hour.Note: If you want a little more kick in your Black Bean Chili, add a can of diced tomatoes with green chiles or use a half can of green chiles. Top with a dollop of sour cream and sliced avocadoes and diced red onions or scallions.
