Ingredients List
1 Tablespoons of olive oil
1 whole chicken
3 medium carrots
4 celery stalks
2 medium onions
1 quart of chicken stock
salt and pepper
1 cup of kale or spinach
1 cup of parsley
1/2 tsp of lemon zest ( optional )
Directions
1 Heat oil a soup pot on medium heat, add the vegetables but not kale, cook for 5 minutes.
2 Put chicken in and cover with chicken broth, boil then reduce and simmer for 45 minutes.
3 Remove bones and fat then add salt, pepper, and kale with the fresh parsley.
