Ingredients List
1 pint cherry or grape tomatoes, halved
1 red bell pepper, sliced
3 organic carrots, sliced
1 yellow bell pepper, sliced
1/2 red onion diced
1 English cucumber portobello caps, sliced
2 celery stalks, chopped
3 cups butterhead lettuce
3 cups spring mix lettuce
optional nuts, seeds, cheese
– salt & pepper to taste
optional spiced nuts topping:
combine 3/4 cup cashew or macadamia nuts, 3/4 tsp each of turmeric, cumin, salt, caster sugar, 1 1/2 tsp paprika (roast on parchment paper for 10 minutes and add to salad)
Directions
1 Place butterhead lettuce and spring mix in a large salad bowl. Cut the rest of the vegetables and add to the bowl.
2 Toss everything together with your favorite salad dressing. Here are some of our favorites.
