Ingredients List
Dressing:
1/3 cup tahini
1 Tablespoon fresh ginger, minced
2 garlic cloves, minced
1 Tablespoon shallot, minced
1 Tablespoon white miso paste
1 Tablespoon coconut aminos
1 Tablespoon rice vinegar or fresh lemon juice
1 Tablespoon sesame oil
2 teaspoons maple syrup
4 Tablespoons water
1/2 teaspoon salt
Salad:
4 cups chopped baby kale
1 bartlette pear
1 cup shredded carrots
1/2 sliced red onion
1 red Bartlett pear diced
1/2 cup nuts (walnuts, pecans, or pistachio)
1/3 cup dried cranberries
Directions
1For the dressing, add tahini, ginger, garlic, shallot, miso, coconut aminos, rice vinegar, sesame oil, water, salt, and maple syrup to a jar and shake vigorously or blend in a high speed blender.
2Assemble a basic salad with baby kale or kale of choice, carrots, red onion, pear, nuts, and cranberries
3Optional Add-Ins: nuts: pistachio, pecan, cashew, etc., sunflower seeds, pumpkin seeds, bean sprouts, radishes, diced apple, dried cherries, beets, hard boiled eggs, avocado, goat cheese
