1Preheat the oven to 375 degrees. Fill half the bottom of a roasting pan with boiling water.
2Wash, dry, and rub the chicken with lemon, salt, and pepper. You can also rub with a garlic clove. Sprinkle the entire chicken with paprika.
3Stuff the inside of the chicken with thyme, rosemary, sage, and garlic cloves. Place the chicken in steamer or baking oven for 20 minutes.
4Remove from steamer/oven, and place chicken on a vertical roaster. Remove the water, and place chicken back in pan.
5Reduce the oven to 360 degrees, and roast the chicken for 20-30 more minutes.
6Remove from vertical roaster. You may need to cut off legs and roast them a little longer- 5-10 minutes. Allow the chicken to rest, remove herbs from its cavity, and remove the skin if desired. Cut and serve.
